To achieve this result, Sylvain applies a simple recipe: manual harvesting, grapes handled with care, minimum intervention, precise levage in used French oak barrels and bottling without fining or filtering. Sylvain’s 100% Pinot Noir Bourgogne Rouge is a wonderful example of a humble’ appellation coming to life in the hands of a genius. Beautifully aromatic, offering plum, dark cherry and black raspberry fruit. Finely textured and noticeably fresh.
